RECIPE AND INGREDIENTS
Ingredients
8 dried guajillo chiles (Remove seeds and tail)
3 dried ancho chiles (Remove seeds and tail)
4 dried chile de arbol peppers (Remove seeds) (WARNING add more if you want it spicy)
4 pounds beef chuck roast
Add salt and pepper to taste
2 tablespoon oil.
4 tomatoes
4 tablespoons apple/white vinegar
3 garlic cloves
3 whole cloves
1 pinch ground cumin
1 pinch ground thyme
1 pinch dried marjoram
1 pinch dried oregano
Some corn tortillas
1 large white onion, finely chopped
1 bunch fresh cilantro, chopped
DIRECTIONS
MAKING THE ADOBO
Step 1
On a preheated pan add some oil and ad Guajillo and Ancho Chiles (chopped in 1-inch pieces), fry them a little bit.
Step 2
Fill a pot with ½ liter of water and boil. Add guajillo, ancho, and arbol chile peppers; boil for 5 minutes. Remove pot from heat and allow peppers to soak until cool. Drain, reserving 1/2 cup of the water.
Step 3
In a blender combine soaked chile peppers, cooked tomatoes, vinegar, garlic, 2 teaspoons black pepper, cloves, cinnamon, cumin, thyme, marjoram, oregano, and salt to taste in a blender. Pour in reserved 1/4 cup of chile water; blend until smooth Since we are not straining, make sure it is fully blended. You might need to blend a second time.
Some people will strain the sauce for the Birria. We are not much of a strainer. Authentic Mexican food is rustic. (this is optional)
PREPARING THE BEEF
Step 4
Rinse your meat and dry with paper towels, season with salt and pepper.
Step 5
Heat oil preference a neutral oil in a pan over medium-high heat. Add meat and cook, you really want color on your beef. Do not skip this step, helps lock in delicious flavors. Remove from heat.
Step 6
Now add the meat sauce into your electric or pressure pot, the sauce has to cover the beef. If for some strange reason does not, add more water and a little more salt. Set it on low for 6-8 hours, or high for 4-6 hours. The meat will be soft and tender and its ready to eat.
Birria de Res is typically served with raw diced onion, chopped cilantro, lime and tortillas.
DOING YOUR TACOS
Step 7
Meanwhile, warm tortillas on a griddle. Fill each tortilla with birria (only meat) and top with chopped onion and cilantro, squeeze fresh lemon and your chiles machos salsa on top

Enjoy with a glass of agua fresca de Jamaica
BUEN PROVECHO!
AGUA FRESCA DE JAMAICA
Step 1
Add 1 litre of water and 1 1/2 cups of dried hibiscus flowers to a pot.
Step 2
Bring to a boil, cover and reduce heat to simmer for 5 to 7 minutes. Remove from heat, uncover and let sit for another 5 minutes.
Step 3
Gently strain the mixture into a Jar or glass container and discard the hydrated hibiscus flowers.
Step 4
Agua de Jamaica is very sweet and fairly strong, but you can start adding 1/4 cup sugar, 4 cups of water and then adding more water or more sugar if you want it a little sweeter and/or more diluted.
Step 5
Serve in a glass filled with ice and enjoy!
